YUM!! I adapted this recipe for these beautiful, organic, delicious cookies from a wonderful baker, Cookie Madness. I always get these amazing SunDrops Chocolate Candies at the Neighborhood Co-Op (in their bulk section!!!), and was so excited to create a cookie recipe inspired by the organic and high quality ingredients they offer. I opted to adapt the recipe by suggesting some of my favorite organic or higher quality ingredients than the basic ones. These tasty candies are free from artificial colors, flavors, or preservatives. And, check out these adorable golden measuring cups from Target!
I ldid a little bit of research about these candies, and found this, "Their smooth chocolate centers are made with rich milk chocolate, sweetened with evaporated cane juice and a touch of unsulphured molasses, while their bright colors come straight from nature, through beet juice, beta-carotene and natural caramel. Try them today, and trust us -- you'll never go back!". I completely agree - I'm so glad to have this candy available locally!
2 sticks butter - at room temperature
3/4 cup evaporated cane sugar
1/2 cup packed organic light brown sugar
1 1/2 teaspoons organic vanilla extract
1 large organic egg
2 1/4 cups all purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
3/4 cups SunDrops candies
- Dough requires chilling, so don’t preheat oven yet.
- Combine the cool butter and shortening in mixer. Beat until creamy. Add both sugars and continue beating on high for two minutes, scraping bowl. Beat in the vanilla and egg. Continue beating for another minute or until fluffy.
- Stir together the flour, salt and baking soda. Add this mixture to the sugar mixture and stir until mixed. Stir in the M&Ms and chocolate chips. Chill batter for about an hour.
- Preheat oven to 350 degrees F. Drop batter by rounded teaspoonfuls onto ungreased cookie sheets, spacing 3 inches apart and bake for 12-14 minutes. Let cool on cookie sheets for about 2 minutes, then transfer to wire rack to cool.
