If you like peanut butter cups, you're going to absolutely LOVE indulging in this delicious pie. It's super simple to make, and since it doesn't require baking, you can make it on the fly. You might want to let it sit in the fridge for a couple of hours, but you can also basically eat it right away.
And, it just so happens to be Pi Day, so let's make some PIE!!
Get ready to create the best Peanut Butter Pie you've ever eaten! This pie tastes like it would cost at least $30 in a bakery or restaurant, and you can have just a little sliver, or a big slice, covered in whipped cream, chocolate sauce, and all sorts of toppings - the choice if yours! The filling is sort of like what you find on the inside of a peanut butter cup, (and almost a cookie dough consistency) so be prepared to fall in love with this recipe.
INGREDIENTS:
1 bag of mini peanut butter cups (you will only use a portion of the bag)
1 bag of peanut butter chips (they look like chocolate chips)
1 container of cool whip
1 pie crust
1 16oz. jar of creamy peanut butter
1/3 C. powdered sugar
Touch of salt, optional
INSTRUCTIONS:
1.) Chop up peanut butter cups into about 6 pieces each. Quarters seemed a bit too big for the pie. Set aside.
2.) Next, mix 3/4 of the container of peanut butter, and 3/4 of your container of cool whip, and about 1/3 C. powdered sugar, and a teeny tiny bit of salt with a hand mixer or in a food processor. It's best to use some sort of electric mixer, because the consistencies of these ingredients are SO different, that it makes life much easier. I like adding a tiny bit of salt to recipes that are super sweet like this one.
3.) Add in your peanut butter cups, and combine thoroughly with a large spoon.
4.) Pour the mixture into your pie crust, then get ready to decorate!
5.) Put the remaining cool whip into a plastic bag. Cut the corner off of the bag, and then decorate with small dollops of cool whip around the entire outside edge, then put a larger dollop in the center and add a peanut butter cup to the center. I also thought it was cute to add the peanut butter chips around the edges too. Alternately, use a can of whipped cream and your life will be a whole lot easier! Feel free to decorate as indulgently as you want :)
