Recently, our Kroger store here in Carbondale, has been undergoing lots of major renovations. The fresh foods department is newly organized and has all new coolers and display, and the frozen and refrigerated foods are all happily in new coolers as well. I love that we now have access to even better selections, which are just laid out so much better now. I have been extremely fortunate to have had the opportunity to work with Kroger on a number of recipes recently (I will share links below), and I am also happy to be able to now help promote one of their frozen food options in this post.
I was given the task to take a frozen meal from SMART ONES and create a whole new recipe from it. I love this sort of meal prep option, because it took less than 20 minutes, and tasted amazing! If I were to have prepped this entire meal from scratch, it would have taken hours upon hours, so the fact that I found a little shortcut was really neat.
I chose to incorporate their Creamy Basil Chicken with Broccoli, and serve it over rainbow rotini noodles that I also tossed with a bit of parmesan cheese, olive oil, and Italian seasoning.
When I initially researched what I wanted to make for this post, I began by browsing the SMART ONES website, and found that they provide pages and pages of easy recipes, that incorporate their frozen meals! I thought is was absolutely genius to take one of their meals, that contained mostly meat and veggies, and use that as the main flavor for your dish, by simply adding just a few more ingredients. So, here is how I created my dish!
RECIPE (SERVES 2-3)
2 Packages of SMART ONES Creamy Basil Chicken and Broccoli
1 box of rainbow rotini noodles
1/2-1 C. Grated Parmesan Cheese
2-3 Tbsp Olive Oil
Italian Seasonings + Salt If your seasoning does not already contain it
Optional Fresh Basil For Garnish
INSTRUCTIONS
1.) Begin to boil your water, and once boiling, add noodles.
2.) If microwaving meal, pull back a bit of the corner to vent, and cook as instructed on package. Alternately, I chose to use a saucepan to heat the chicken broccoli, so once the noodles went into the water, I began to warm my chicken and broccoli in my pan on medium heat, with a lid on it. Keep an eye on your food, and stir occasionally - in the pan, it should never be simmering, just warming.
3.) Once noodles are ready, drain them and transfer to a bowl. Add your olive oil, cheese, and seasonings, and stir until pasta is coated evenly. Do a taste test and see if your pasta needs anything else.
4.) Add pasta mixture to your plates, and once chicken broccoli mixture is warmed throughout, simply pour it over your noodles. Feel free to also garnish with a bit of fresh basil (mine was picked straight out of my garden, yay!).
