Dinner In Less Than An Hour, Using Sustainable Seafood and Sweet Potatoes from Kroger

If you're like me, you are in need of a few ways to save time and energy while prepping dinner. Why are there never enough hours in the day? Kroger is now offering Easy For You Seafood Service, where they prep and package anything from their sustainable seafood in their counter, and season it while you wait. Simply bake the packet in your oven as directed on the label, and you have mess-free seafood prep made easy.

I am still sort of new to making seafood at home, so this whole process made shopping for and picking out the perfect seafood for dinner a lot easier. In addition to making the in-store process easier, these Easy For You Seafood Service packets allowed me to make this delicious meal in less than an hour. Scrumptious and well-balanced meals definitely do not have to take forever, so read on to see how I saved a ton of time on this delicious meal.

I already knew that I wanted to get shrimp, but I had no clue how I wanted it seasoned. So, the folks at Kroger helped me by explaining all of my options. I went with the California Lemon Seasoning, and was definitely happy with the amount of seasoning they included.

These packets are priced based upon the price per pound of whatever seafood you choose. These shrimp were on a really good sale this week, and looked really fresh, and tasted SO incredible. The salmon, king crab legs, and so many of the other options looked really good too, but for me being new to preparing seafood at home, I knew that shrimp would be a great option for me. 

Shopping for this dinner was super quick as well. All I needed was my white shrimp (prepped by the store), a couple of sweet potatoes, 2 small red potatoes, and a head of leafy, green lettuce. I had everything else at home, like olive oil, Worcestershire sauce, seasonings, and salad dressing, so this was really a great experience.

With these three items in hand, I headed home and turned my oven onto about 375 degrees. The packaging on the Easy For You Seafood Service packet recommends that for a gas oven I use 375 degrees F, and since I got a little under a pound of shrimp, I was to bake everything for about 18-20 minutes. Just consult the back of your Easy For You Seafood Service packet, because they give so many great tips, and tell you what time to use for your own specific meal. 

To make the roasted potato side dish, I grabbed out a cutting board, and I began to dice up my potatoes into small, bite sized pieces. The smaller the pieces, the quicker the potatoes will cook - a big time saving tip. I also like chopping up 1-2 other styles of potatoes for this dish if I have them. Once the potatoes are all chopped up, I added about 3-4 Tbsp of Olive Oil, about 2 Tbsp of Italian dressing, 1-2 Tbsp. Worcestershire sauce, and a ton of different seasonings in a bowl, and mixed it all together. Add those potatoes into the mixture, and coat evenly.

Next, simply spray a baking sheet with non stick spray, and spread out the potatoes evenly. Bake those for up to 20 minutes, stirring with a spatula half way through baking time. 

On a second baking sheet, place your Easy For You Seafood Service packet, and cut or poke holes in the plastic portion of the packet. This will allow your seafood to steam in the bag, baking it with no oil, which I thought was genius, helping reduce the oil in your overall meal! 

Prep your lettuce for the salad while everything is in the oven, and it will be ready when everything else comes out.

Once your seafood is fully cooked, pull that out of the oven, and very carefully cut a slit down the front center of the packet. This will release lots of steam, so be careful, and there will also be lots of juices in the bag, which have steamed your seafood. Just make sure the seafood is thoroughly cooked before eating. 

You will know the potatoes are done when they are easy to prick with a fork, and have a bit of that beautiful brown edges look to them. They're delicious with the shrimp and side salad I made for this meal.
